Document Endangered Cuisines
Yeah, this sounds a bit strange, but it is what I love and what I do best so there must be something here.
I would like to start this work in Burma. I know and love Burma, the people, the food, the climate, just about everything. With all the variety of ethnic groups in Burma there is a huge variety of foods and knowledge of the plants of the forests of the area which is being lost, more quickly each day as young, displaced mothers end up convinced by modern advertising about how nutritious a packet of top ramen instant noodles is now because of the addition of a few freeze dried vegetables.
There is so much knowledge there of various plants and preparation methods which is disappearing. I know this is the case in other countries as well.
I have started in this direction with the work I am doing on my website www.helladelicious.com. An especially interesting aspect of this is the nearly worldwide loss of the freindly and symbiotic relationship that we humans depend upon for healthy digestive and immune system functioning. Every culture of the world has originally had a specific of culture-of bacteria or yeasts-such as kim chi, sourdough bread, keffir that was passed down through families for generations.
These chains of cooperative relationship and communion between man and micro-organism have been under attack for the last couple hundred years and we are now learning that we have destroyed what was supporting us.
This is a fascinating field and I can't wait to learn more about it...
